Drying and Storing Chamomile

Preserving its healing power—and why it’s worth the care

Properly drying chamomile is essential for preserving the plant’s valuable medicinal compounds, which are responsible for the calming, anti-inflammatory, and digestive benefits found in chamomile tea. When handled with care, dried chamomile flowers become a gentle yet powerful herbal remedy that can be enjoyed year-round.

For best results, German chamomile flowers should be dried immediately after harvesting. Spread the freshly picked flowers in a single layer and place them in a dry, dark, well-ventilated room with temperatures between 21 and 27 °C (70–80 °F). Under these conditions, drying typically takes about two weeks. Darkness and moderate warmth help protect delicate essential oils and flavonoids that give chamomile tea its soothing properties.

If you prefer a quicker method, chamomile can be dried in an oven set to a very low temperature (around 30 °C / 85 °F). Higher heat can damage the plant’s medicinal constituents, reducing its effectiveness as a tea for relaxation, digestion, and immune support. When oven-drying, it’s important to let moisture escape—propping the oven door open with a wooden spoon works well and helps prevent overheating.

When dried slowly and gently, chamomile flowers retain their signature apple-like aroma and therapeutic value. Stored in an airtight container, away from heat and light, they can remain effective for up to one year. Dehydrating Chamomile

Spread chamomile flowers in a single layer on lined dehydrator trays (use a mesh liner), set to the lowest temperature 95–115°F (35–46°C), and dry 1–12 hours until crisp. Check often—low and slow prevents “frying.”

  1. Gently clean flowers; rinse only if needed and pat dry.
  2. Arrange in one even layer on trays.
  3. Dehydrate at 95–115°F for 1–12 hours.
  4. Done when crinkly and crunchy.
  5. Cool completely; store airtight in a cool, dark place.

Tips

  • Avoid higher heat—it harms flavor.
  • High humidity = longer drying time.
